Thug Kitchen: ‘Moroccan Spiced Couscous’

Damn I love me some couscous.  I buy a box of this stuff and grill up veggies to toss into the mix.  It’s cheap, simple, and fills me up! 

So when I saw this recipe in the Thug Kitchen cookbook, I knew I had to try it.  

Basically, just buy a box of instant couscous and dump the spice packet that comes with it.  Then mix up the spices in this recipe and voila, you’ve made something better!

Moroccan Spiced Couscous
I'm going to make a few suggestions for this recipe. I would leave out the orange segments and use orange zest instead. I'm a texture freak and I love oranges, just not in my couscous. I'd rather have the orange flavor you get from the zest. DON'T FORGET TO DOUBLE THE SPICES!

  1. 1 1/2 cups couscous
  2. 1/4 tsp salt
  3. 1/2 tsp ground cinnamon
  4. 1/2 tsp paprika
  5. 1/8 tsp ground cumin
  6. 1 1/2 cup boiling water
  7. 1 1/2 tbl EVOO
  8. 2 1/2 tbl rice vinegar
  9. 2 to 3 cups spinach
  10. 1 cup orange segments or about 1/2 cup of orange zest
  1. 1. Mix the couscous, salt, and spices in a medium saucepot with a tight-fitting lid. Add the boiling water to the couscous mix without splashing it around and burning the fuck out of your hand. Stir everything up and quick put on the lid. Let it rest for at least 8 minutes. The couscous should absorb all the water while you wait and it should be tender when you take off the lid. Easy shit.
  2. 2. While your ass is waiting, mix together the EVOO and rice vinegar in a small glass. Chop u the spinach into thick ribbons.
  3. 3. When the couscous is ready, stir it around with a fork to fluff it up, add the dressing to it, and stir it up some more until it is mixed. Gently fold in the orange pieces/zest and spinach. Season to your fucking taste. Serve cold or at room temperature.
